If you're a fan of spice and citrus, then you are going to love this recipe! The combination of flaky salmon, sharp citrus and a gentle chilli heat makes this one of our favourite quick lunches.
Ingredients
2 salmon fillets · Juice of 1 orange and 1 lime · 1 tsp chilli flakes · 2 tbsp olive oil · Mixed salad leaves · 1 avocado, sliced · A handful of pomegranate seeds · Salt and pepper to taste
Method
Mix the citrus juice, chilli flakes and olive oil into a marinade. Coat the salmon and leave for 15 minutes. Pan-fry or grill on medium-high heat for 3–4 minutes each side. Serve over dressed salad leaves with avocado and a scattering of pomegranate seeds.
