Halloumi and cherry tomatoes are a classic combination, but the pomegranate molasses dressing takes it somewhere really special. Sweet, tangy and deeply savoury all at once.
Ingredients
250g halloumi, sliced · 200g cherry tomatoes, halved · 2 tbsp pomegranate molasses · 1 tbsp olive oil · Fresh mint leaves · Salt and pepper
Method
Grill or pan-fry the halloumi slices until golden on both sides. Arrange on a plate with the cherry tomatoes. Drizzle generously with pomegranate molasses and olive oil. Finish with torn fresh mint and a crack of black pepper.
